How To Cook Country Style Pork Ribs In The Oven

For fall-apart meat, country-style ribs really need to cook long and slow. Otherwise youre going to get chewy pork.

The good news is that the cooking time is almost entirely hands-off. After a minimal amount of prep to get the ribs ready to cook, your ovens doing most of the work here.

You start by salting and peppering your ribs and placing in a single layer in a roasting pan or baking dish. If you use a baking tray, make sure it has a fairly high rim, as the meat will release a lot of liquid as it cooks.

Cover with foil and bake at 300°F for 2 hours. Go read a book and sip some lemonade in front of a fan.

When your timer goes off, carefully uncover the meatthe steam will be hotand drain the liquid from the tray. The meat looks super gross and sad at this point, but dont worry. The next time it comes out of the oven, it will be beautiful.

Brush a generous coat of your favorite BBQ sauce over the meat.

Lower the temperature to 275°F and then bake uncovered for another hour. Your ribs are done when the meat has a beautifully baked-on coat of BBQ sauce and when you can pull it apart with a fork.

Brush with a little more sauce, give the ribs a couple minutes to rest, and then serve with some mashed potatoes or macaroni salad, and a simple veggie side like Garlic and Butter Green Beans or Oven-roasted Broccoli, and enjoy!

Best Internal Temperature For Boneless Pork Ribs

The FDA recommends grilling pork to an internal temperature of 145°F this will give you pork that is still a little pink inside. For pork without pink, I recommend cooking to an internal temperature of 150°F.

As always when grilling meat, let the meat rest for 5-10 minutes before serving. This is for two reasons. The internal temperature of the meat will continue to rise another 5-10 degrees once removed from the grill. Second, grilling over high heat draws juices to the surface of the meat, so by giving the meat time to rest, the juices can redistribute to the center.

Please keep in mind that this recommended internal temperature doesn’t apply to ground pork.

Thats because country-style ribs arent truly ribs. Theyre a different cut of pork that was first marketed as a kind of ribs in the 1960s. Theyre closer to pork chops, not as fatty as ribs, so if you overcook them, they become dry and tough. The opposite of ribs. But they still pack a decent amount of fat, keeping them juicy and tender on the grill. You can get these ribs both bone-in and boneless. Or apparently at our local grocer, in a combo pack of bone-in and boneless.

This past holiday weekend, we picked country-style ribs both for their juicy, tender flavorfulness and for the fact that they grill quickly. Grilling To Internal Temperature

I am always surprised to find a recipe that still only relies on time. I realize that this is how people used to do it in the old days but it is just not a reliable option.

The rate of cooking can depend on a lot of different factors. This includes the size and the thickness of the country style ribs. Each grill is different as well and can produce varying levels of heat.

This is why you should always use a meat probe to track the internal temperature. When the temp reaches 145 F, it is cooked all the way through.

If you want to ensure that you won’t overcook the grilled country style ribs, then you can take the meat off a little earlier.

This is because even once the meat is removed from direct heat, it will still continue cooking for a bit.

If you do take the country style pork ribs off the heat earlier, make sure to rest them for a bit longer as well.
