Butchers can get more money per pound selling the high-value rib eye meat on top of the bones than they can sell the meat as back ribs. They trim back ribs down, leaving little meat above the bone. This aggressive trimming means you can see some of the bones peeking through the meat. Try and find back ribs with as much meat on them as you can and look for good fat marbling.

Beef back ribs are pretty affordable since they tend to be cast-offs from the rib eye production process. Look in the beef section of your grocery store or go right up to the counter and ask. A good butcher will be more than willing to sell you the back ribs and earn some money on a cut that often gets discarded. If you cant find them in a store near you, we have ordered them from Felton Angus Beef with great success.

In this case, I go directly to my local butcher and request for about 3 to 4 lbs. of beef short ribs sliced across the bone about a quarter of an inch thick. Most butchers slice the ribs along the bone similar to that of spare ribs.

Once the meat is ready, all you need it mix the marinade ingredients and marinate for at least 3 hours. Since the cut is thin, the meat will easily absorb the flavor. When grilling, make sure that the heat of the grill is set to medium so that the meat wont get burnt right away. All it takes is a few minutes of grilling per side, and then you are ready for lunch.

How To Smoke Beef Ribs

Low and slow is the name of the game when smoking beef ribs. You need enough smoke to properly season the meat and give you that beautiful dark coveted bark. These guys also need plenty of time to render that fat and tough connective tissue to get them to a perfect fall-off-the-bone texture.

  • Prep. There is a layer of fat on top of the ribs and another papery membrane on the bone side of the ribs. You can ask your butcher to remove the membrane or you can do it at home. Either way, that membrane is not very pleasant to eat and you want it gone. If youre doing it at home, work a butter knife underneath the membrane, use a paper towel to get a good grip, and lift it off.
  • Season. Slather the trimmed ribs in spicy Dijon mustard , and season liberally with either my Beef Rub or equal parts salt, pepper, and garlic powder. The mustard gives a little hint of flavor while also helping that dry rub cling to the outside of the ribs.
  • Smoke. With your smoker preheated to 250 degrees F, place the seasoned ribs on the smoker, close the lid, and smoke for 3 hours.
